Abstract
Global food systems, from agricultural production to processing, distribution, retail sale, food processing, and the resulting waste in the entire process in the supply chain, create greenhouse gas emissions that cause climate change. At the same time, some negative environmental effects such as misuse of spring water, environmental pollution, and loss of biodiversity may occur during the production of food. While access to food is a major problem in underdeveloped countries, food waste is a concern in developed countries. In addition, people want to trust the food they consume, and they want to know under what conditions the food they consume is produced and whether it comes to their table as promised. Especially in the field of gastronomy, many people are curious about the adventure of food. Issues such as traceability, transparency, reliability, and efficiency offered by blockchain technology ensure that waste can be prevented; on the other hand, it also provides the opportunity for consumers to monitor their food from field to table and provides a more sustainable food system.

The concept of sustainability can be defined in general terms as efforts to leave a livable world to future generations. In other words, sustainability; conservation, development and improvement of environmental, social and economic resources to meet the needs of current and future generations. As concerns about climate change, loss of biodiversity and pollution on our planet become more common, investments in sustainable business practices and green technology have gained importance and businesses have begun to be encouraged in this area. Sustainability aims to protect the natural environment, human health and ecological balance without compromising people’s lifestyles while promoting innovative practices.
As in all business areas, sustainability issues have started to gain importance in the field of gastronomy. Especially considering the food and beverage area, on the one hand, there are significant wastes in food, while on the other hand, people cannot access food items. Similarly, food wastage is experienced because the safety of foodstuffs is not assured. When these situations are examined, it is seen that there is a great obstacle in front of sustainability. It is thought that blockchain technology, which is a new technological development, can overcome many inefficiencies, especially in the food system.
By providing a new environment of trust and transparency in the food system, it reveals sustainability opportunities at every step of the food chain. Blockchain technology is thought to provide many advantages in gastronomy, such as traceability, transparency, reliability and efficiency. In this context, this study reveals the advantages of using blockchain technology in the field of gastronomy in terms of sustainability.
