Introduction

Tourism and hospitality are increasingly becoming more complex, having grown exponentially over the last decade. As the industry becomes more complex, new demands arise regarding its overall organization and operations, which call for not only more experienced and specialized staff, but also advanced technological solutions that support new paradigms and expectations. In addition to reshaping the links with territories and their communities, this transformation also promotes differentiated practices and consumption logics that require permanent monitoring, creativity, and adaptation. On that account, an increasing number of services and new functionalities are generated, making it crucial for the different tourism and hospitality players, to become more competent in their capacity to deal with change and constant reconfigurations, both in the markets and in the ways, services are operated. This will make it possible to increase competitiveness and improve organization and cooperation, adding value to current offers, and promoting differentiation, consequently, increasing the value of products and services. Thus, this book seeks to understand current changes and challenges in tourism and hospitality, fostering reflection and sharing new approaches to the development of tourism products and destinations, in the logic of hospitality organization and operationalization, and the importance of technology and competitiveness in tourism, hospitality, and food service.
